Cheese & Fruit

An interesting selection of imported and domestic cheeses and colorful fruit, all beautifully arranged. Fine crackers are included.


Elegant Cheese and Fruit Platter

Presented beautifully , wedges of our favorite cheese are served with sliced apple, sliced pear, strawberries and grapes. Fine crackers are served alongside. Cheese spreaders and cheese planes are provided for serving the cheeses.

Greek Cheese Ball

A formed cheese spread made with cream cheese, Feta cheese, black olives, oregano and garlic. Served with cucumber slices, pita chips and crackers.

Green Olive Spread

Satisfy your green olive urge with this delicious spread made with cream cheese and green olives, to spread on crackers and toasted baguette slices.

 

Hot Mushroom Dip

Thick and creamy, this dip is made with sautéed fresh mushroom slices, bacon, sour cream, cream cheese and herbs. Served over a flame with an assortment of fine crackers and bread sticks.

Hot Spinach Dip with Tortilla Chips

A mildly spicy mixture of fresh spinach, cream cheese, chopped fresh tomato and jalapeño with Monterey Jack cheese, baked and served with corn tortilla chips.

Basil Parmesan Spread

A shaped spread of pureed fresh spinach, basil, garlic and Parmesan layered with sun dried tomatoes and cream cheese. Served with a basked of assorted breads and crackers.

Hummus

     Served with crudités and homemade pita chips.

Mel’s Ruben Dip

     A baked dip containing corned beef, cream cheese, saurkraut and swiss cheese. Perfect with rye crackers and pumpernickel chunks.

Black Bean Dip

     Black bean dip served with blue and white corn chips.

Scott’s Spicy Guacamole Dip

     This delicious spicy avocado dip is a favorite! Presented with blue and white corn chips.

Roasted Garlic and Sun-dried Tomato Spread

Red Pepper & Red Onion Dip with Bagel Chips & Veggies

Roasted Red Pepper Garlic Dip

Roasted red peppers are pureed with garlic, cream cheese and fresh herbs and served in a hollowed pepper. Assorted dippers include mozzarella sticks, jumbo black olives, green pepper strips, pepperoni slices and small bread sticks.

Layered Mexican Dip

Layers of spiced refried beans, guacamole, sour cream, chopped lettuce and tomato, black olives and finely shredded cheddar cheese. Served with assorted chips and fresh salsa on the side.

This is an outstanding dip made with chopped fresh tomato, crumbed bacon and a mayonnaise-sour cream base. Very nice with fresh veggies and sesame sticks.

Towering Inferno

Our newest creation, in the shape of a tower! Layers of colors, tastes and textures: cream cheese, spicy shredded Buffalo chicken, Bleu cheese and crunchy bits of celery and scallion. Served with a nice assortment of crackers.

Waldorf Dip

A light and creamy fruit dip with raisins, bits of celery and hint of cinnamon. Served with our Fresh Fruit Platter along with slices of homemade fruit and nut bread. A nice change from the usual fruit platter.

Creamy Olive Spread

This favorite has a cream cheese base, large chunks of green olives, herbs and garlic shaped into a small dome. Served with crackers and baguette slices.

BLT Spread

A blended cream cheese base is layered with shredded lettuce, crumbled bacon, chopped tomato and shredded cheddar cheese. Served with assorted crackers. Destined to be a hit!

Baked Pecan & Corned Beef Dip

A lovely cream cheese dip baked with chopped corned beef and sprinkled with toasted chopped pecans, this is wonderful with Triscuits, Pumpernickel sticks & carrots for dipping.

Green Onion & Bacon Dip

Served in a pumpernickel bowl, a delicious creamy dip loaded with crumbled bacon and chopped green onions, accented with the zest of horseradish.

Layered Greek Dip

This layered dip is so fresh and colorful, it’s a must for all parties! Cream cheese flavored with chopped scallions topped with hummus, chipped cucumbers, tomatoes, ripe olives and feta cheese. It is then lavishly garnished with cucumber slices and tomato, served with our homemade pita chips.

Island Cheddar Spread

Cream cheese combines with shredded cheddar, port wine, seasonings, crushed pineapple and minced parsley. Chilled and served with a variety of crackers.

Homemade meatballs made with ground steak and veal in a creamy beef sauce, lightly accented with allspice.

Roast Beef Horseradish Canapés

Pumpernickel squares spread with zesty horseradish and radish butter, topped with watercress and thinly sliced roast beef.

Sausage, Chili and Cheese Tartlets

Light and crispy wonton wrappers hold a filling of Italian sausage, Monterey Jack and Sharp Cheddar cheeses, and green chillies. These pastries are served hot and topped with a swirl of sour cream and sprinkled with green onion.

Pork & Apricot Empanadas

South-of-the-border turnovers offer a delicious and unusual flavor combination. Baked cubes of lean pork, jalapenos, cream cheese and slivers of dried apricots are blended together and baked in a cornmeal and cream cheese pastry. Served with fresh cilantro chutney.

Cuban Pork Tenderloin Kabobs

Pieces of pork tenderloin marinated, roasted and served on mini skewers with a flavorful cold cilantro sauce. These are moist, full of flavor and memorable!

Tangerine Peel Beef

Chunks of steak are marinated in an oriental tangerine marinade, broiled or grilled and served on a mini bamboo skewers.

Lamb Satay with Peanut Dipping Sauce 

Chunks of lamb infused with a flavorful marinade, threaded onto bamboo skewers and broiled. Served with a spicy peanut sauce.

Tenderloin with Three Sauces

Peppered and browned beef tenderloin is sliced paper thin and served on baguette slices with the choice of three sauces for guests to choose from: Thai, Dijon Cream and Horseradish.

Hoisin Broiled Beef

Very thin slices of filet mignon are marinated in a sesame and soy mixture, wrapped around water chestnut and scallion, then brushed with Hoisin sauce and broiled. A true melt-in-your-mouth sensation.

Roast Beef with Caper Mayonnaise on Baguette

Roasted tenderloin of beef, thinly sliced and served atop baguette slices spread with caper Dijon mayonnaise, garnished with watercress.

Roast Beef on Baguette

Deli-sliced roast beef with red onions and caper/Dijon mayonnaise. Served on slices of baguette and topped with spinach leaves.

Roast Beef with Rosemary Mayonnaise and Breads

Thinly sliced roast beef is served with mayonnaise flavored with fresh rosemary and garlic. Assorted small breads are served alongside for guests to make little sandwiches. The presentation is striking: Romaine leaves line a platter, scattered with thinly sliced red onions and roast beef on top of that.

Antipasta Plate

A colorful platter of contrasting flavors, including rolled slices of hard salami, provolone cheese, cherry tomatoes, marinated mushrooms, and assorted olives.

Prosciutto Wrapped Asparagus

Slightly steamed fresh asparagus brushed with Dijon mustard and wrapped with prosciuto.

Pepperoni Puffs

Whole water chestnuts marinated in brown sugar, ginger and soy sauce, wrapped in bacon and baked.

Meatball on a Stick

Meatballs are seasoned with crushed croutons and cheese, wrapped in pastry and baked on a stick. Served with warm marinara sauce for dipping.

 

Mediterranean Ham Pinwheels

Pastry rolled around ham, feta cheese, basil and bits of sun-dried tomato. Baked until nicely puffed and lightly browned.

Sesame Teriyaki Drumettes

Meaty chicken drumettes trimmed of all fat, marinated in a soy sauce and sesame oil marinade then broiled and sprinkled with sesame seeds.

Sesame Chicken Drumettes

Plump little chicken drumettes are coated with flour, sesame seeds and red pepper and baked. Served with a sweet and sour dipping sauce.

Spanish Drumettes

Meaty chicken drumettes trimmed of all fat, marinated in a spicy cumin flavored sauce then baked.

Chicken Honey Drumettes

Plump and meaty drumettes dipped in a honey-Dijon mixture then coated with chopped pecans and breadcrumbs, then baked. A hearty and fabulously-flavored finger food.

Jerk Chicken Wings with Creamy Dipping Sauce

Chicken wings are flavored with brown sugar, garlic, spices and hot pepper sauce, baked and served with a complimentary dipping sauce.

Buffalo Wings

Meaty little drumettes baked in a spicy buffalo sauce. Great when paired up with our bleu cheese dip with carrots and celery sticks.

These miniature, moist and flavorful muffins are split and piled high with layers of shaved smoked turkey and spread with a mayonnaise that has been flavored with garlic and fresh orange.

Puff pastry encases onion-flavored chicken breast pieces, baked to a delicate and delicious golden brown, topped with sesame seeds. We like this served with our homemade Dijon-Honey sauce. A favorite!

Onion Chicken Skewers with Lemon Dipping Sauce

Tender and flavorful strips of chicken breast coated with our special onion coating and baked on skewers until lightly toasted brown. Served with our delicious lemon dipping sauce, which is a wonderful compliment to the onion-flavored chicken.

Parmesan Crumb Chicken Sticks

Strips of chicken breast coated with Parmesan and bread crumbs, baked and served on a stick. We serve this with a nice lemon sauce for dipping.

Pineapple Chicken Salad

Chopped chicken breast, fresh pineapple chunks, peas and cashews are dressed with a light sour cream dressing. Presented on a platter lined with red leaf lettuce, garnished with strawberries and sprinkled with cashews. This is a nice addition to a buffet where a main dish salad is called for.

Polenta Squares with Chevre

Little squares of polenta (cornmeal) topped with creamy seasoned Chevre cheese and a slow-baked cherry tomato half. Served at room temperature.

Glazed Brie with Fruit (Fall & Winter)

A large wheel of Brie coated with a ground almond, pecan, walnut, cinnamon and brown sugar glaze and broiled until lightly browned. Garnished with dried apricots and figs, served with fine crackers and fresh fruit. This makes a striking centerpiece.

Flower Garden Brie (Spring & Summer)

A large wheel of soft imported Brie cheese with fresh, edible flowers in the top of the cheese. Surrounded with fresh garden flowers and fruits, this makes a striking centerpiece for a spring or summer table.

Baked Brie with Raspberry Sauce

One of the most luxurious ways to serve Brie! Brie is baked and surrounded by a pool of fresh raspberry puree (seedless of course). Served with baguette slices.

Divine Hawaiian Fruit

Fresh pineapple chunks, celery, walnuts, banana and papaya are combined with a light sour cream and lemon dressing, chilled, and served in a pineapple half, sprinkled with coconut. This is a luxurious way to serve fruit.

Baked Brie En Croute

A wheel of Brie (baby Brie, medium or large wheel) baked in a puff pastry crust with pretty pastry sculptures adorning the top. Served by cutting into small wedges.

Farmer’s Market Pie

A free-form pie crust (baked without a pie pan) is covered with a seasoned cream cheese & Bleu cheese filling, then topped with circular patterns of fresh vegetables, including cherry tomato halves, mushroom slices, sliced olives, cucumber slices, chopped hard cooked eggs and herbs. Served cut into slices.

Artichoke Truffles

Pretty and fancy, marinated artichoke hearts are covered with a seasoned cream cheese then rolled in a Parmesan-herb coating. Sliced to show the pretty design inside, served atop greens on a beautiful platter. Served cold.

Colorful and elegant, our flavorful deviled eggs are swirled decoratively and topped with assorted garnish including caviar, dill sprigs and beet stars.

Tortilla Spirals

Flour tortillas are spread with a mixture of cheeses, green chiles, sun-dried tomatoes and herbs; then rolled, sliced, and baked. Served warm.

Brushetta

Small slices of crusty peasant bread are toasted and rubbed with fresh garlic and brushed with olive oil. Top with your favorite topping including Herbed Goat Cheese, Fresh Tomato and Herbs, or Olive Tapenade.

Tomato Phyllo Pizza

Brazilian Onion Bites

White bread cut into mini squares, with an onion-mayo filling, spread with a Parmesan and mayo topping and baked lightly. The finished result is a crispy outside, creamy inside bite, much like the flavor and texture of an onion ring.

Martini Olive Spread with Baguette Slices

A mix of olives are sauteed with a splash of Vodka and garlic, minced and served as a spread on toasted baguette slices. This is a dream come true for olive lovers!

Large shrimp wrapped in layers of flaky phyllo pastry and baked to a delicate crispness. Served hot from the oven with a warm, mellow sauce made with white wine, shallots and garlic.

     Little star-shaped puff pastries topped with sour cream, caviar, and chives.

 

Shrimp & Jalapeño Cheese Canapés

One of our favorite creations: crispy little bread rounds hold a filling of herbed cream cheese flavored with pickled Jalapeño, topped with a medium shrimp. Each canapé is garnished with a little herb sprig. The many taste sensations all at once are delightful: cool, crunchy, spicy!

Bacon Wrapped Scallops in a Port Wine Glaze

Large sea scallops are wrapped with bacon, skewered and roasted. A light port wine glaze finishes off the scallops. We like to present these in a very unique manner!

Hot Shrimp Dip with Fine Crackers

 

Coconut Rum Shrimp

One of our favorite shrimp creations, t his dish is full of flavor and color! Large shrimp are skewered and presented dramatically with an apricot, coconut, rum and jalapeno sauce poured over. Served cold.

Smoked Salmon with Dill Mayonnaise on Pumpernickel Squares

Always impressive, these are delicious and will WOW your guests every time! Little pumpernickel squares are touched with dill mayonnaise, topped with Nova Scotia smoked salmon, and topped with a final touch of the dill mayonnaise and garnished with a little fresh dill sprig.

Grand Marnier Shrimp Wrapped in Snow Peas

Another spectacular presentation! Large-medium shrimp are first marinated and cooked in a Grand Marnier sauce, then wrapped with blanched snow peas and speared onto a purple cabbage head. The presentation is colorful and beautiful.

Little Curried Shrimp Kabobs

Large shrimp on bamboo skewers are brushed with a curry-chutney-onion butter sauce. Served warm– a delicious new way to serve shrimp. ONE OF OUR FAVORITE CREATIONS!

Smoked Salmon Ball

Chunks of smoked salmon with cream cheese, red onion and fresh cilantro in a ball. Served with fine crackers and our homemade Parmesan crackers.

 

Shrimp Fajita Kabobs

Large shrimp marinated in a delicious fajita sauce, then wrapped along with a crunchy water chestnut and smoky bacon served on a skewer! The flavor combination is out of this world!

Shrimp DeJonghe

Small shrimp layered with herb-seasoned bread crumbs, moistened with lemon juice and sherry and baked until lightly browned. Served in a round chaffer.

 

Shrimp Artichoke Fondue

A baked creamy dip with baby shrimp and artichokes. Served with homemade Parmesan crackers.

Layered Shrimp Appetizer

A cream cheese and scallion base is topped with a layer of spicy embellished cocktail sauce, layered with cocktail shrimp, finely grated cheddar cheese and chopped scallions. Served with hearty wheat crackers.

Southwestern Shrimp & Avocado Cocktail

Large shrimp are served along with a chopped avocado, tomato, and black bean salsa with plenty of fresh lime, garlic and chili powder. Served in a beautiful presentation in an overgrown cocktail glass, with seasoned geometric shapes of corn tortillas on the side. Small forks provided for the guests.

Crunchy Clam Puffs

Toasted bread rounds are spread with a minced clam, cream cheese and onion filling. Baked until lightly brown; delicious!

Avocado and Crab Dip

Fresh avocados are dices and lightly mixed with lemon juice, onion, cream cheese and sour cream with crab meat folded in. Chilled and served with crackers and homemade Melba toast. Served in a bowl made of ice and flowers.

Blushing Lobster Cocktail

Lobster tail is steamed and cut into bite-size pieces, then folded very lightly into a blushed sauce made with sour cream, mayonnaise, ketchup and light seasonings. The presentation is beautiful, and guests are given small seafood forks.
